Pan Seared Tilapia

Yields: 4 servings Preptime: 15 minutes Cook time: 10 minutes


  • 4Tilapia Fillets
  • 6Tomatillos
  • 1 Lg Avocado
  • 1/2 MedOnion, Diced
  • 1/2 bunch Cilantro, Chopped
  • 6 tbspCumin
  • 2 clovesGarlic
  • 1/4 cup Vegetable Oil or Non-Stick Spray
  • 1 10 oz canCasa Fiesta Mild Enchilada Sauce
  • 1 7.75 oz canCasa Fiesta Jalapeño Relish
  • 1 tspOnion Powder
  • 1 tspGarlic Powder
  • 3 tbspCumin
  • 1/4 cupHoney
  • Salt and Pepper, To Taste


  • For Tomatillo Sauce: Remove paper shells. Wash and quarter tomatillos.
  • Cut avocado in half lengthwise and remove pit.
  • With a spoon, scoop out avocado and set aside.
  • In a blender, combine tomatillos, avocado, diced onion, chopped cilantro, 6 tbsp of cumin, and garlic cloves.
  • Blend for 30 seconds. Add salt and pepper to taste. Refrigerate.
  • For Enchilada Sauce: In a saucepot, add the can of enchilada sauce, half of the can of jalapeño relish, onion powder, 3 tbsp of cumin, and honey.
  • Mix and simmer.
  • To pan-sear Tilapia: Season fish with salt and pepper and set aside.
  • In a large sauté pan, add the oil or spray and heat over medium-high heat.
  • When pan is hot, add the fish two fillets at a time (for easier flipping) and cook for 2 minutes on each side or until the fish is 165°F in the middle and the flesh is solid white.
